ECOLOGIA.-- La ecología es la rama de la biología que estudia las relaciones e interrelaciones de los diferentes seres vivos entre sí y con su entorno: .. Estudia cómo estas interacciones entre los organismos y su ambiente afectan a propiedades como la distribución o la abundancia. En el ambiente se incluyen las propiedades físicas y químicas que pueden ser descritas como la suma de factores abióticos locales, como el clima y la geología , y los demás organismos que comparten ese hábitat (factores bióticos). Los ecosistemas están compuestos de partes que interactúan dinámicamente entre ellas junto con los organismos, las comunidades que integran, y también los componentes no vivos de su entorno. Los procesos del ecosistema, como la producción primaria, la pedogénesis el ciclo de nutrientes, y las diversas actividades de construcción del hábitat, regulan el flujo de energía y materia a través de un entorno. Estos procesos se sustentan en los organismos con rasgos específicos históricos de la vida, y la variedad de organismos que se denomina biodiversidad La visión integradora de la ecología plantea el estudio científico de los procesos que influyen en la distribución y abundancia de los organismos , así como las interacciones entre los organismos y la transformación de los flujos de energía La ecología es un campo interdisciplinario que incluye a la biología y las ciencias de la Tierra. La ecología evolucionó a partir de la historia natural de los antiguos filòsofos griegos como sentando lHipócrates, Aristóteles, Teofrasto as bases de la ecología en sus estudios sobre la historia natural. Las bases posteriores para la ecología moderna se establecieron en los primeros trabajos de los fisiólogos de plantas y animales. Los conceptos evolutivos sobre la adaptación y la selección natural se convirtieron en piedras angulares de la teoría ecológica moderna transformándola en una ciencia más rigurosa en el siglo XIX. Está estrechamente relacionada con la biologìa evolutiva,la genética, la etología .. La comprensión de cómo la biodiversidad afecta a la función ecológica es un área importante enfocada en los estudios ecológicos. Los ecólogos tratan de explicar: Los procesos de la vida, interacciones y adaptaciones El movimiento de materiales y energía a través de las comunidades vivas El desarrollo sucesional de los ecosistemas La abundancia y la distribución de los organismos y de la biodiversidad en el contexto del medio ambiente. Hay muchas aplicaciones prácticas de la ecología en biología de la conservación, manejo de los humedales, manejo de recursos naturales ( la agroecología,la agricultura y la Silvicultura, la agroforestería la pesca ), la planificación de la ciudad (ecología urbana), la salud comunitaria, la economía, la ciencia básica aplicada, y la interacción social humana (ecología humana). Los organismos (incluidos los seres humanos) y los recursos componen los ecosistemas que, a su vez, mantienen los mecanismos de retroalimentación biofísicos son componentes del planeta que moderan los procesos que actúan sobre la vida (bióticos) y no vivos (abióticos). Los ecosistemas sostienen funciones que sustentan la vida y producen el capital natural como la producción de biomasa  (alimentos, combustibles, fibras y medicamentos), los ciclos biogeoquímicos globales, filtración de agua, la formación del suelo, control de la erosión, la protección contra inundaciones y muchos otros elementos naturales de interés científico, histórico o económico.MUSHROOMS AGRONED Computer data base.

Cualquiera de los organismos talofitos, sin clorofila, de colores varios y nunca verdes, de consistencia acorchada, esponjosa, carnosa o gelatinosa, y por lo general, con forma de sombrero o casquete sostenido por un piececillo: después de varios días de lluvia los bosques suelen llenarse de hongos.

Fungi es uno de los reinos en que se dividen los seres vivos, y en el están incluidos los hongos que pueden ser unicelulares o pluricelulares, carecen de pigmentos fotosintéticos, sus células se reúnen en hifas para formar el micelio, y pueden ser parásitos, saprofitos o simbiontes. La micología es la ciencia que estudia los hongos.

 

 

Los hongos son tan diferentes de las algas y plantas superiores como de los animales. Tradicionalmente han sido reunidos con las plantas. Sin embargo, se consideran en un reino aparte, el reino de los hongos, que es uno de los cinco grupos principales de organismos vivos (véase Taxonomía).

Los hongos son un grupo diverso de eucariotas unicelulares y pluricelulares. Son principalmente saprofitos o parásitos y se encuentran donde exista sustancia orgánica disponible.

Junto con las bacterias, los hongos son los descomponedores de la biosfera. También son productores de enfermedades en las plantas. Algunos hongos son comestibles. Los líquenes son combinaciones de hongos y algas que constituyen una unidad fisiológica y morfológica. El hongo y el alga pueden sintetizar compuestos orgánicos que ninguno de ellos es capaz de producir aisladamente.

Los líquenes son notablemente susceptibles y sensibles a los compuestos tóxicos existentes en el aire contaminado. Debido a ésta sensibilidad, tienen un papel como bioindicadores del grado de polución del aire.

Los hongos son un grupo diverso de eucariotas que difieren mucho por sus características estructurales y sus modos de reproducción. Tienen nutrición heterotrófica obligada por la ausencia de clorofila. (Véase Nutrición autótrofa y heterótrofa).

Sus células están incluidas en paredes celulares, por lo menos en alguna etapa de su ciclo vital, y producen algún tipo de espora, generalmente en gran número, durante el proceso reproductor.

Hay dos divisiones de hongos, Mixofitos y Micofitos, también conocidos estos últimos como hongos verdaderos. Los primeros son muy parecidos a los protozoos. La clase Mixomicetes parece mostrar relación con flagelados incoloros; en cambio, los Acrasiomicetes parecen estar relacionados con las amebas. Los hongos verdaderos son en su mayoría pluricelulares y formados por filamentos llamados hifas. El conjunto de hifas constituye un micelio.

Biología de los hongos

El crecimiento de las hifas se realiza por el ápice, pero en todo lo largo del micelio se sintetizan proteínas que son transportadas a los ápices de las hifas mediante corrientes citoplasmáticas. Este tipo de crecimiento da la explicación de por qué las setas, por ejemplo, pueden aparecer en una sola noche.

Con su rápido crecimiento y su organización filamentosa, los hongos tienen una relación con el medio ambiente muy distinta de la que tienen otros organismos. La relación entre superficie y volumen es muy elevada en los hongos, lo cual significa que tienen un contacto muy íntimo con el medio. Prácticamente todas las partes de un hongo están en contacto con el medio. A consecuencia de ello, un hongo con un extenso micelio puede tener un profundo efecto sobre su espacio inmediato, por ejemplo, fijando las partículas del suelo.

El mantenimiento de este tipo de relación íntima entre el hongo y el medio requiere una elevada intensidad metabólica. En consecuencia, es preciso que todas las partes del hongo sean metabólicamente activas y que los distintos tipos de capas de tejido en reposo o inactivo que se encuentran, por ejemplo, en las plantas superiores, falten en los hongos. Las enzimas y otras sustancias secretadas por los hongos tienen un efecto inmediato en el espacio que los rodea y tienen una gran importancia para el mantenimiento del mismo hongo.

Los hongos se desarrollan mejor en lugares oscuros y húmedos. Algunos hongos pueden crecer aún bajo condiciones desfavorables; resisten considerablemente la plasmólisis, pues pueden desarrollarse en soluciones concentradas de sal o azúcar.

Los hongos saprofitos tienen en ocasiones hifas especializadas denominadas rizoides que los fijan al sustrato. Los hongos parásitos tienen con frecuencia hifas especializadas denominadas haustorios, que penetran en el interior de las células de otros organismos y absorben sustancias nutritivas directamente a partir de ellos.

Al igual que las plantas, los hongos tienen paredes celulares, se reproducen mediante esporas y carecen de movimientos. En la mayoría de los grupos de hongos, la pared celular está constituida por quitina.

La reproducción

La reproducción puede tener distintas formas: asexual, por división simple, gemación o esporas, y sexual, por medios característicos de cada subgrupo. Las esporas de los hongos acuáticos tienen flagelos típicos, y las de los hongos terrestres son células inmóviles que se dispersan por la acción del viento o de los animales. (Véase Reproducción de los seres vivos).

En todos los hongos, las estructuras reproductoras, ya sean sexuales o asexuales, están separadas de las hifas por septos completos. Estas estructuras reproductoras se llaman gametangios si intervienen directamente en la producción de óvulos y espermatozoides, y esporangios si intervienen en la producción de esporas. Los grupos de esporangios o las estructuras sobre las que se encuentran se denominan, en ocasiones, cuerpos fructíferos.

Los gametangios masculinos de los hongos se llaman anteridios (pero estas estructuras unicelulares son muy distintas de los anteridios pluricelulares que se encuentran en los briófitos y en las plantas vasculares). Los gametangios femeninos se denominan oogonios. Los anteridios y los oogonios se encuentran solamente en algunas clases de hongos cenocíticos.

La mitosis y la meiosis son, en los hongos, distintas de estos mismos procesos en las plantas y en los animales. La envoltura nuclear no se disocia ni vuelve a formarse, sino que sufre una constricción cerca del punto medio entre los dos núcleos hijos, y el huso acromático se forma en el interior de la envoltura nuclear. En los hongos que producen esporas móviles no se encuentran centriolos.

Otra característica de los hongos es el fenómeno de la heterocariosis. Muchos hongos son cenocíticos. Una cepa de un hongo se llama heterocariótica si los núcleos que se encuentran en el mismo citoplasma son genéticamente distintos. Si los núcleos son genéticamente iguales, la cepa se denomina homocariótica. La heterocariosis es muy importante en la genética y en la evolución de los hongos. Cuando núcleos genéticamente distintos existentes en hongos heterocarióticos se segregan, se crean hifas fenotípicamente distintas. Así, aunque sólo haya dos tipos diferentes de núcleos en un micelio pueden obtenerse tres fenotipos distintos.

Algunos grupos de hongos tienen un ciclo parasexual; en ocasiones se fusionan núcleos haploides para producir núcleos diploides. Algunos de estos núcleos diploides son homozigóticos, mientras que otros son heterozigóticos. Este sistema se da entre los hongos que no se reproducen sexualmente o en los que la reproducción sexual es poco frecuente.

Sistemática de los hongos

En los hongos verdaderos se distinguen, según algunos sistemas de clasificación, dos divisiones: Eumicetos o Eumycota, que incluye las clases Chytridiomycetes, Zygomycetes, Ascomycetes y Basidiomycetes; y, por otra parte, la división Oomycetes u Oomycota, de la que derivan varios órdenes.

Otras clasificaciones establecen la división Micofitas, que incluye cinco clases: Ficomycetes, Ascomycetes, Basidiomycetes y Deuteromycetes.

Chytridiomycetes

Clase de hongos cuyas formas más sencillas son protoplastos desnudos que viven como parásitos intracelulares. Hay formas miceliales simples o ramificadas. La membrana es quitinosa. Se reproducen por medio de zoosporas uniflageladas y mediante la formación de gametos. Los tipos miceliales tienen una verdadera alternancia de generaciones.

Allomyces, un género de hongo terrícola, posee hifas plurinucleadas y ramificadas. Las hifas desarrollan gametangios femeninos y masculinos. Los gametangios masculinos liberan gametos masculinos flagelados, que son atraídos por una sustancia producida por los gametos femeninos flagelados, más voluminosos. Los dos gametos se fusionan (anisogamia) y los zigotos resultantes se desarrollan dando organismos cenocíticos ramificados que se parecen a los que produjeron los gametos. Estos organismos producen zoosporas. Éstas dan lugar a más plantas esporofitas, pero cuando el cultivo envejece los esporangios empiezan a desarrollar paredes gruesas, que resisten la desecación. Cuando los esporangios resistentes se colocan en un ambiente húmedo sufren meiosis y forman meiosporas flageladas, que dan lugar a la generación siguiente de gametofitos.

Zigomycetes

Clase de hongos terrestres que viven en el suelo, en su mayoría saprofitos, aunque algunos son parásitos de plantas, de insectos o de pequeños animales del suelo. En las hifas sólo hay septos durante la formación de cuerpos reproductores. Las paredes celulares son predominantemente quitinosas.

Uno de los miembros más conocidos de esta clase es el moho negro del pan (Rhizopus stolonifer). El micelio de Rhizopus está constituido por tres tipos de hifas. La mayor parte del talo está constituido por hifas desprovistas de septos, multinucleadas y con un crecimiento rápido. Partiendo de éstas, crecen hacia arriba hifas aéreas denominadas estolones. Los estolones forman rizoides en los puntos donde sus ápices entran en contacto con el medio.

En los extremos de los estolones se forman los esporangióforos (rama portadora de esporangios). Cada esporangio se inicia como un hinchamiento en cuyo interior hay un cierto número de núcleos y, finalmente, queda separado del esporangióforo por la formación de un septo. En el interior del esporangio se desarrollan racimos de esporas negras esféricas. El esporangio se ennegrece a medida que madura. Una vez liberada, cada espora germina para producir un nuevo micelio.

Tiene lugar la reproducción sexual cuando se encuentran dos hifas de diferentes individuos. Los dos gametos se unen para formar un zigoto. Sólo es diploide el zigoto del moho del pan. La germinación del zigoto se hace por meiosis y todas las hifas de la siguiente generación son haploides.

Ascomycetes

Clase de hongos terrestres y acuáticos con hifas septadas, pero con los septos perforados. Los cuerpos reproductores están separados por septos completos. La quitina predomina en las paredes celulares. La reproducción sexual comprende la formación de una célula característica, el asca o asco, en el que se produce la meiosis y dentro del cual se forman las esporas.

En muchos ascomycetes, las hifas están empaquetadas juntas en complejos cuerpos fructíferos, llamados ascocarpos. La reproducción es frecuente con esporas especializadas denominadas conidios, que quedan individualizadas en los ápices de hifas modificadas llamadas conidióforos. Las levaduras son ascomicetos unicelulares que se reproducen asexualmente por gemación.

Gran parte de los mohos blancos, rojos y pardos, causantes de la alteración de los alimentos, son Ascomycetes; Neurospora es el género del moho asalmonado del pan. Muchos Ascomycetes causan enfermedades en plantas, como por ejemplo, el cancro del castaño, producido por el hongo Endothia parasitica, y la enfermedad holandesa del olmo provocada por Ceratocystis ulmi. El cornezuelo de centeno (Claviceps purpúrea) es un hongo parásito del centeno; aunque este hongo raramente provoca daños graves a la cosecha de centeno, es peligroso porque una pequeña cantidad mezclada con los granos de este cereal es suficiente para causar una enfermedad grave en los animales domésticos o en las personas que comen pan elaborado con su harina.

Cierto número de ascomicetos son comestibles. Incluyen colmenillas, que se cuecen y se comen como los hongos, y las trufas, ascomicetos que producen ascocarpos subterráneos.

Basidiomycetes

Clase de hongos terrestres y acuáticos con hifas septadas, pero con los septos perforados. Los septos que separan los cuerpos fructíferos son completos. La reproducción sexual comprende la formación de basidios, en los que tiene lugar la meiosis y donde nacen las esporas.

Los basidiomicetes son dicarióticos (células binucleadas) durante la mayor parte de su ciclo biológico, y con frecuencia presentan una compleja diferenciación de "tejidos" en los basidiocarpos.

Los basidiomicetos comprenden las conocidas setas, amanitas, royas, tizones y champiñones. El micelio a partir del cual se producen las setas se extiende por debajo de la superficie del suelo y forma un anillo, que va muriendo por el centro y que puede crecer hasta alcanzar un diámetro de 30 m.

El champiñón común de los prados es Agaricus campestris, una especie relacionada con el champiñón cultivado (A. bisporus), que es una de las pocas setas que pueden ser cultivadas comercialmente. El cuerpo vegetativo de estos hongos está formado por una masa de hifas blancas, ramificadas y filiformes, que en su mayor parte son subterráneas. Las hifas están tabicadas, pero los tabiques no están perforados como en los ascomicetos. Después de cierto tiempo aparecen a intervalos sobre el micelio masas compactas de hifas llamadas yemas. La yema da lugar a un hongo formado por tallo y casquete. En la cara inferior del casquete se encuentran muchas láminas perpendiculares llamadas laminillas, que se extienden radialmente desde el tallo hasta el borde del casquete. Los basidios se desarrollan sobre la superficie de estas láminas. Cada basidio contiene dos núcleos que se unen para formar un núcleo diploide. A su vez, éste sufre división por meiosis, para dar origen a cuatro basidiosporas haploides. La planta produce millones de basidiosporas, cada una de las cuales puede dar origen a un nuevo micelio.

Los hongos con láminas comprenden también especies del género Amanita, que están entre las más venenosas. Sólo un pequeño fragmento de Amanita verna puede ser mortal.

Las royas del orden Uredinales constituyen un gran grupo de Basidiomycetes, parásitos obligados de plantas vasculares. Tienen ciclos vitales muy complejos. Puccinia graminis es el agente de la roya del trigo, que constituye una causa de pérdidas económicas para los cultivadores.

Oomycetes

Estos hongos se distinguen de todos los demás por una serie de caracteres, y por ello se pueden agrupar en una división distinta de la de Eumycota o Eumicetos. Los oomicetos son formas miceliales, muchas de ellas acuáticas y de tipo algas. Estos hongos tienen reproducción sexual oogámica y esporas flageladas.

Los representantes de la familia Saprolegniaceae viven en el agua, generalmente saprofitos, sobre plantas e insectos en putrefacción. La membrana celular consta de glucanos y celulosa. La familia Peronosporaceae comprende hongos parásitos que se presentan principalmente en plantas terrestres superiores.

La especie Plasmapora viticola vive en el tejido de las hojas y frutos de la vid, en los espacios intercelulares, y envía haustorios cortos a las células vivas. En los puntos en que el micelio del parásito se encuentra en un estoma, pasa a través de éste al exterior y forma allí esporangióforos ramificados reconocibles como un moho, provistos de un gran número de zoosporangios. Estos zoosporangios se desprenden enteros y, arrastrados por el viento hasta las hojas de otras plantas, vierten sobre ellas su contenido, que se transforma en zoosporas provistas de dos flagelos laterales de desigual longitud, el más corto con bárbulas. Las zoosporas, más tarde, retraen los flagelos y germinan, produciendo un nuevo micelio.

Los órganos sexuales se producen en los extremos de las hifas. No se forman gametos masculinos libres sino que los núcleos masculinos llegan hasta las ovocélulas por medio de tubos copuladores, que crecen desde los anteridios hasta el interior de los oogonios. Cuando falta el anteridio se "copulan" dos núcleos dentro del oogonio.

Importancia de los hongos en los ecosistemas

Los hongos, junto con las bacterias, son los descomponedores de la biosfera (véase Descomposición biológica). La descomposición por obra de hongos y bacterias libera anhídrido carbónico a la atmósfera y devuelve compuestos nitrogenados y otras sustancias minerales al suelo, donde pueden ser utilizadas de nuevo por las plantas verdes y, a través de ellas, por los animales.

En la naturaleza, la madera de los árboles muertos es descompuesta por la acción fúngica y, en primer término, por la actividad de los representantes de las familias Poliporáceas y Agaricáceas. Algunos de estos destructores de leño atacan ya los troncos vivientes. Pero muchos hongos sólo se desarrollan sobre madera muerta.

En su calidad de descomponedores, los hongos también pueden resultar perjudiciales. Con enzimas que degradan toda clase de productos orgánicos, los hongos, en ocasiones, son altamente destructores. Esto es especialmente cierto en los trópicos, en donde el calor y la humedad facilitan el crecimiento fúngico. Los hongos atacan los tejidos, pinturas, cartones, cuero, ceras, en realidad, casi cualquier sustancia. Incluso en los climas templados, los hongos crecen sobre el pan y otros productos como frutos frescos, verduras y carne.

Algunos hongos han cambiado su actividad como descomponedores para pasar a ser atacantes de organismos vivos. Los hongos constituyen la causa más importante de enfermedades en las plantas. Otros hongos provocan enfermedades en el hombre y en animales domésticos.

De gran importancia ecológica son las formas de vida de los hongos simbiontes. La mayoría de los hongos del suelo forestal viven en simbiosis con las raíces de los árboles de hoja plana y acicular; muchos de ellos también se relacionan con las raíces de plantas herbáceas. (Véase el apartado Relaciones simbióticas de los hongos en el artículo de Simbiosis).

Los hongos que se encuentran asociados a las raíces forman las micorrizas, nombre que significa hongo-raíz. En condiciones naturales, las plantas solas no son capaces de extraer los elementos minerales del suelo. Son los hongos asociados con las raíces los que absorben estos elementos minerales y los transfieren a la planta hospedadora. Cuando la vida era únicamente acuática, los vegetales podían utilizar directamente los minerales disueltos en el agua. Cuando los vegetales comenzaron a colonizar las tierras emergidas, encontraron condiciones totalmente distintas. Las primeras plantas terrestres tuvieron que adaptarse a las nuevas condiciones. Solamente las que pudieron asociarse a hongos consiguieron colonizar los continentes.

Las micorrizas desarrollan una red de filamentos en torno de las raíces, red que amplía considerablemente la superficie de contacto entre las raíces y las soluciones o las partículas del suelo. Las asociaciones de micorrizas han demostrado ser tan necesarias que la mayoría de los vegetales superiores que se han sucedido desde hace tres millones de años, aparte de algunas excepciones, han conservado este sistema simbiótico. No todas las especies de hongos forman micorrizas, pero la casi totalidad de las plantas verdes están asociadas simbióticamente a hongos micorrizógenos.

Los hongos más apreciados por los aficionados a las setas son los boletos y las trufas. Pero la parte recolectada no es más que el órgano de reproducción del hongo. El "cuerpo" del hongo está compuesto por una red subterránea de filamentos, el micelio, que está estrechamente relacionada con los árboles. Las micorrizas facilitan la absorción de todos los elementos minerales, pero sobre todo la de los elementos menos solubles y menos móviles en el suelo, es decir, el fosfato, el cobre y el zinc.

Según las plantas, las asociaciones con los hongos simbióticos revisten formas distintas. Las ectomicorrizas rodean la raíz con un manto de filamentos o micelio; de este manto parte una red miceliar externa, que se extiende por el suelo, y una red miceliar interna que penetra en la raíz, pero sin entrar en el interior de las células. Los hongos que forman ectomicorrizas son hongos superiores: setas, amanitas, lactarios, trufas, etc. Las endomicorrizas penetran en la raíz, en el interior de las células radicales, y forman minúsculas arborescencias, muy ramificadas, llamadas arbúsculos. Este tipo de micorrizas es muy frecuente y está muy extendido. Se encuentra en algunos árboles de bosques templados y en la mayoría de los árboles de las zonas tropicales o ecuatoriales.

Hay otro tipo de micorrizas; por ejemplo, las orquídeas tienen las endomicorrizas llamadas de ovillo. En las heliantemas hay otras endomicorrizas de ovillo distintas. Los hongos asociados a las heliantemas son las llamadas terfecias o criadillas. También hay asociaciones llamadas ectendomicorrizas que se caracterizan por la presencia de un manto y la penetración del micelio en el interior de las células radicales.

También existe simbiosis entre hongos y animales. En el tubo digestivo de insectos hematófagos y xilófagos o los que chupan jugos vegetales se encuentran simbiontes vegetales compuestos por bacterias y levaduras. Los simbiontes suministran al animal vitaminas, en especial del grupo B.

Aplicaciones y utilidades de los hongos

La capacidad de las levaduras (Sacharomyces) para producir alcohol etílico a partir de glucosa en ausencia de oxígeno es de gran importancia económica. Las levaduras presentes en la elaboración del vino suelen ser las halladas espontáneamente sobre la piel de la uva; parte de la diferencia de sabor de los distintos vinos se debe al tipo de levaduras de la región. Las levaduras de la panificación (ver pan) y de la fabricación de cerveza son cultivadas y se conservan cuidadosamente como cepas puras para evitar la contaminación.

De Penicillium notatum y otras especies se obtienen antibióticos (penicilina). Otras especies de Penicillium (P. roqueforti y P. camembertii) se emplean en la fabricación de algunos quesos. Los esclerocios (masa compacta de micelio) de Claviceps purpúrea contienen alcaloides tóxicos que se emplean en farmacología.

Más que los plaguicidas, los productos biológicos preparados a base de hongos pueden inhibir el desarrollo de los hongos del suelo nocivos para los cultivos. Entre las enfermedades de las plantas provocadas por hongos patógenos, las que afectan a los órganos subterráneos son difíciles de combatir con los medios químicos tradicionales. Algunos hongos de la familia de las Pitiáceas afectan al rendimiento del cultivo de pepinos; de igual modo, la especie Fusarium oxysporum es responsable de la putrefacción en los cultivos de tomates. Las técnicas de lucha química son, en el caso de esta fusariosa, poco satisfactorias. Se ha puesto a punto un procedimiento que recurre a una cepa antagonista, seleccionada entre poblaciones de hongos no patógenos de los suelos, en los que el hongo patógeno, a pesar de estar presente, no provoca la enfermedad. Esta cepa, que pertenece a la misma especie que el agente nocivo, posee unas características especiales que hacen de él un competidor eficaz contra aquél. Los resultados obtenidos en condiciones experimentales controladas han sido satisfactorios. Sólo queda por demostrar que la aportación de este organismo vivo a los cultivos no suponga un riesgo para el entorno. El valor nutritivo de los hongos no es muy elevado. Muchas especies son altamente tóxicas o venenosas y los hongos comestibles son susceptibles de poder convertirse en venenosos en ciertas épocas, en ciertas condiciones climáticas y dependiendo del lugar en que se han desarrollado. Las especies más seguras para el uso humano son la seta común (Agaris campestris), que tiene la corona de color blanco y las láminas al principio rosas y luego negras; el robellón (Cantharelus cibarius), que es amarillo dorado y presenta un borde vuelto hacia arriba; la oronja (Amanita caesarea), en la cual el píleo es amarillo y rojo; el porcino (Boletus edulis), que tiene una corona grande y castaña en su parte superior y blanquecina en su parte inferior; y la Clavaria flava, que se presenta en forma ramificada ya blanquecina y que tiene los ápices color naranja.

Cultivo de hongos

El consumo de hongos en el mundo es grande. Los hongos son un alimento de excelente sabor y propiedades gastronómicas. La recolección es tradicional en muchos países, aunque otro importante grupo de regiones del mundo tienen una especie de fobia colectiva hacia los mismos; este hecho fue estudiado por Gordon Wasson y su esposa, quienes establecieron dos categorías: los países consumidores tradicionales de hongos fueron denominados micófilos y los que los repudiaban o ignoraban, micófobos.

Las necesidades de un consumo inmediato y seguro de hongos en regiones y grupos que no tienen tradición micófila ha llevado a las modernas sociedades a cultivar especies muy determinadas de setas. Como por el momento el mercado demanda muy pocas especies de ellas, éstas se reducen prácticamente a dos: la seta común (Pleurotus ostreatus) y el champiñón (Agaricus bisporus).

Un hecho sintomático en este sentido es que en España existe una fuerte tradición en el País Vasco y Cataluña, mientras que en Castilla la falta de cultura micófila ha hecho que pocas especies de hongos tengan denominación vernácula, al contrario de lo que ocurre en el vascuence o el catalán. Un ejemplo es la propia seta cultivada: como especie silvestre en castellano se denomina pleuroto (en forma de ostra u orellanes); sin embargo, a la especie comercial se la conoce con el nombre genérico de seta o seta de cardo; ésta última denominación corresponde a otra especie, Pleurotus eringii, la cual crece en campos abiertos donde crece el cardo, mientras que el pleuroto (Pleurotus ostreatus) se desarrolla sobre los troncos de las frondosas.

Historia del cultivo

Las técnicas de cultivo de hongos, tal como se realizan hoy mismo, se han desarrollado hace relativamente poco tiempo. Las culturas orientales han tenido una fuerte tradición de conocimiento y utilización de las plantas animales y, por supuesto, de hongos. Las culturas occidentales muy centradas en la producción y consumo de cereales, desarrollaron muy poco el cultivo de plantas como los hongos y su eventual utilización ha partido de las especies silvestres.

En ciertos jeroglíficos egipcios, con una antigüedad de 4.600 años, se encuentran representados algunos hongos, pero no sólo aquellos que estaban destinados a la alimentación de los faraones sino aquéllos que tenían una función ritual; tal vez se trataba de los hongos de la inmortalidad que aparecen en otros escritos antiguos como la referencia al misterioso y escurridizo Soma de los vedas de la India. Otras culturas neolíticas como las de Tassili en el desierto del Sáhara han dejado pinturas rupestres donde se encuentran representados hongos; si llegaron a ser cultivados y hasta qué punto tuvieron importancia, es algo incierto y difícil de determinar.

Se sabe que, en Grecia, Nicandro cultivaba hongos en los huecos de los árboles, los cuales llenaba simplemente de estiércol y rociaba con agua de cuando en cuando. Los romanos llegaron a domesticar una seta comestible de nombre botánico Pholiota aegerita por el procedimiento del cultivo en tocones o huecos de árboles.

En la época de Luis XIV se cultivaban hongos en cuevas situadas cerca de París. El propio Rey se beneficiaba de estas incipientes formas de cultivo de hongos que constituían una de las delicadezas de la sofisticada gastronomía de este magnate; el cultivo de setas fue después emulado por los ingleses.

La milenaria cultura china no podía dejar a un lado tan importante aspecto. Actualmente, la farmacopea china cuenta con al menos cincuenta especies de hongos utilizadas para curar un buen número de dolencias. Algunos de los hongos orientales tienen una tradición de cultivo anterior a nuestros modernos sistemas.

En Japón, una seta conocida como shiitake o shitake ha sido cultivada al menos desde el siglo XIV; su domesticación y técnica de cultivo se ha extendido en los últimos años a los países occidentales. Si bien chinos y japoneses se disputan la paternidad de este antiguo cultivo, lo cierto es que se encuentra descrito en un documento chino de 1313. Parece ser que durante siglos fue declarada en exclusividad "alimento de los emperadores". Es relativamente dócil y a la vez fuerte para un cultivo casero o en pequeña escala.

Existen otras especies de hongos que se cultivaron tradicionalmente en China; tal es el caso de la Auricularia auricula-judae conocida en castellano como oreja de judas, nombre directamente traducido de la denominación latina. Otras especies cultivadas y comercializadas en oriente, como Volvariella volvacea o Tremella fuciformis (cuyas denominaciones no se encuentran castellanizadas), son setas interesantes como candidatos del cultivo y excelentes por su potencial valor gastronómico. Estos y otros hongos han llegado al consumo occidental a manos de las colonias chinas en Estados Unidos. Su extensión hacia Europa y en concreto a España llegó cuando ya se había comercializado en cierta escala en aquel país.

Cultivo de hongos realizado por hormigas

Un primitivo y antiquísimo sistema de cultivo de hongos debe buscarse en los insectos. Algunas hormigas no solamente recolectan especies de plantas con sus semillas y hojas, sino que han dado un salto evolutivo y con su diminuto cerebro han llegado a establecer, a lo largo de milenios, complejas técnicas de cultivo de hongos. Se han determinado varias especies de hormigas cultivadoras de hongos en los géneros Cyphomyrmex, Apterostigma y Trachymyrmex.

Las hormigas cortadoras de hojas del género Atta tienen unas mandíbulas modificadas a través de largos milenios de evolución; estas mandíbulas tienen una forma asimétrica y funcionan como unas efectivas tijeras con las que recortan las hojas, las cuales son llevadas por las hormigas obreras asidas y mantenidas en posición vertical formando largas filas de portadoras que transportan su carga al hormiguero. Estas hojas recortadas son almacenadas en unas grandes salas interiores donde se procesan para el cultivo de hongos.

Ya dentro del hormiguero, las hojas son cuidadosamente limpiadas y troceadas por obreras especializadas. Los trozos así preparados son apilados de una forma especial en cámaras de temperatura y humedad constantes. Entre las hojas crecen un cierto tipo de hongos. Cualquier contaminación o ingerencia de parásitos es escrupulosamente atajada por las obreras. Estos hongos cultivados constituyen el principal medio de alimentación de la colonia. Se cree que las reinas, al irse para formar un nuevo hormiguero, llevan consigo micelios o hifas que les permiten reproducir los hongos alimenticios de las futuras generaciones. Se han determinado algunas especies de estos hongos, principalmente pertenecientes al grupo Leucocoprini.

Los jardines de crecimiento de hongos pueden llegar a tener el tamaño de un balón de futbol. Las hormigas cosechan el micelio antes de que se desarrolle el cuerpo frutífero, de tal manera que no se han encontrado setas o cuerpos reproductores de hongos en el interior de los mismos, lo cual indica que su reproducción se realiza por medios vegetativos, multiplicando los micelios al transportar las hifas. Este sistema garantiza la pureza genética del hongo pero implica al mismo tiempo una transmisión directa de generación tras generación.

Es así como el propio hongo ha evolucionado para adaptarse al medio exclusivo de las hormigas cortadoras. Es más, cada especie de cortadora tiene su propio hongo específico cuidado y heredado a través de generaciones. Se ha comprobado que algunas hormigas renuevan genéticamente sus especies recolectando hongos silvestres similares a los cultivados con anterioridad, tal vez forzadas por alguna enfermedad de los hongos o por su degeneración genética.

Se calcula que la antigüedad de este sistema de cultivo es de entre 5 y 15 millones de años; por tanto, mucho antes de que la especie humana comenzara siquiera a perfilarse en la historia evolutiva del planeta.

Técnicas modernas de cultivo

Los hongos no poseen clorofila y son incapaces de realizar por sí mismos la síntesis que realizan las plantas; ellos parten de materia viva o muerta (son saprofitos), realizan un importante papel en el reciclado de la materia muerta en la naturaleza. Por ello, el sustrato sobre el que viven no puede ser el mismo que el de las plantas; los hongos o setas comestibles son cultivados sobre serrín paja, granos triturados de cereales, troncos de frondosas y otro tipo de material básico más arena, grava, perlita o vermiculita. Las características del sustrato dependen del tipo o especie.

La seta es la parte del hongo que brota en el ciclo sexual del hongo. En la mayoría de los tipos de hongos cultivados la parte inferior del sombrero está compuesta por laminillas o tubos, en los cuales se encuentran los órganos reproductores específicos capaces de generar esporas, las cuales equivalen a las semillas del reino de las plantas. Las setas, por similitud con las plantas, se denominan cuerpo frutífero.

Antes de desarrollar la parte de seta, el hongo pasa por una serie de fases: la espora germina y genera unos filamentos denominados hifas. Estas hifas se aglutinan en nódulos de los que, a su vez, brotan los denominados micelios y a partir de ellos se genera la seta. Este sistema no es común para todos los hongos pero sí para los comestibles, como ya se ha comentado en el apartado de reproducción.

Cada fase requiere un procedimiento y un medio de cultivo generalmente distinto: la primera fase comprende la obtencion y germinación de las esporas. La segunda, el desarrollo y multiplicación de micelios, y la tercera la obtención de las setas.

Obtención de esporas

El cultivo desde un principio parte de las esporas, a partir de las cuales se inicia el ciclo del cultivo de los hongos. Las esporas, en la mayoría de los hongos cultivados, se encuentran en órganos especiales denominados basidios (en todos los Basidiomicetos), que se situan en las láminas, caso de los champiñones y de las setas comunes, o bien se situan en tubos (caso de Boletus), debajo del sombrero.

Los basidios van soltando las esporas poco a poco, y éstas son diseminadas por el viento. Si se coloca el sombrero de una seta ya madura sobre una cartulina, cristal o papel de filtro y se deja durante un día o más, se verá que se desarrolla una mancha que corresponde al color de la espora de la especie concreta que se trate. En términos técnicos este conjunto se denomina esporada (en inglés, spore print). El color de la esporada de cada seta es específico de cada especie; así, en el caso la seta cultivada Pleurotus ostreatus es grisácea, y la del champiñón (Agaricus bisporus) es de color pardorrojizo oscuro.

La esporada así obtenida puede utilizarse inmediatamente o refrigerarse entre 2 y 5 ºC; para ello, es preferible dejarla secar durante algunas horas. El siguiente paso es la germinación de la esporada en un medio de cultivo adecuado. El procedimiento de siembra en este sentido es sumamente delicado; requiere de una serie de cuidados y medidas que deben seguirse escrupulosamente. El problema más grande de los hongos es que en el aire existen numerosas esporas, bacterias y toda clase de seres microscópicos que invadirán el medio de cultivo que se haya elegido. Por ello, las condiciones de limpieza y asepsia en este primer paso deben ser similares a las de un laboratorio.

Germinación de esporas

La primera regla del cultivo de hongos es la esterilización de todos los materiales que se vayan a emplear: probetas, frascos, tubos de ensayo, espátulas. La germinación de esporas puede hacerse de manera casera en frascos de boca ancha y de cierre hermético como los que se encuentran en el mercado para el envasado de conservas.

El sustrato que se emplea puede ser el definitivo o uno específico para esta fase hecho a base de agar-agar. Esta sustancia puede diluirse en agua hasta una proporción de 1:200; las preparaciones más condensadas son más densas y gelatinosas. Se puede emplear agua y agar esterilizados o esterilizar la mezcla con su frasco en autoclave o, en su defecto, en una olla de presión durante una hora, con cuidado de que el frasco esté colocado al aire en una canastilla y sólo reciba el vapor del agua que previamente se ha colocado en el fondo.

Los sustratos definitivos llevan vermiculita, perlita, grava y una sustancia alimenticia que depende de la especie de seta a cultivar, todo lo cual debe ser desinfectado en horno o en olla de presión.

Un método casero consiste en preparar frascos nuevos de tapa metálica a los que se les ha practicado unos tres agujeros pequeños con una broca. Se cierran las perforaciones con cinta adhesiva de goma de buena calidad y se esteriliza todo conjuntamente con el medio de cultivo, ya sea en los frascos, en la olla a presión, o en el autoclave por el método del vapor antes descrito. Se deja enfriar todo perfectamente tapado; a continuación con una jeringuilla hipodérmica se inyectan en los agujeros, a través de la cinta adhesiva, las esporas disueltas en agua esterilizada. El frasco se mantiene en lugar oscuro, entre 20 y 28 ºC (24 ºC es la temperatura ideal), hasta que se observe la formación de hifas o hilillos que darán como resultado formaciones de micelios. Este sistema garantiza la total pureza del micelio.

Composición de los medios de germinación

Las fórmulas de laboratorio son las siguientes: un litro de agua pura; 15 g de agar; 5 g de glucosa; 5 g de maltosa; 0,5 g de fosfato monopotásico; 0,5 g de sulfato de magnesio; solución de cloruro férrico al 1%, 0,5 cc.; 50 mg de tiamina y 1 mg de biotina.

Comercialmente se pueden conseguir en laboratorios medios de germinación ya preparados utilizados para la proliferación de hongos; el más común se denomina dextrosa-agar de Sabouraud.

Un medio de cultivo casero válido para las setas comunes y otras especies afines se puede preparar con 50 g de patatas y zanahorias, peladas, rayadas y puestas en maceración durante una hora; a continuación se ponen a hervir en una olla durante diez minutos. El puré obtenido se tamiza a través de una gasa y a este puré se le añaden 20 g de glucosa o azúcar de caña y otro tanto de polvo de agar-agar. El preparado debe estar estéril o esterilizarse en una olla a presión en su propio envase para evitar contaminaciones.

Desarrollo de los micelios

Las hifas se desarrollan rápidamente en una semana o poco más. El siguiente paso es trasladarlas a otro medio de cultivo donde se desarrollen bien los micelios. El cultivo se traslada a un frasco de boca ancha previamente esterilizado y preparado con el sustrato adecuado, el cual debe cubrir sólo los dos tercio del mismo. Los micelios se desarrollarán rápidamente y cubrirán completamente el frasco. Estos micelios pueden dividirse en otros frascos para garantizar una producción numerosa: se puede considerar que un micelio originario puede multiplicar por diez su propio volumen.

La colocación del agar en el medio de cultivo se hace con material e instrumental esterilizados, golpeando el frasco para que penetre en el medio y el micelio se encuentre en contacto con las sustancias alimenticias del sustrato.

Composición de los sustratos

La mayoría de los sustratos destinados al crecimiento de los micelios se realizan sobre un nutriente que contenga granos como trigo o arroz integral, a los que se añade perlita o vermiculita esterilizadas.

Los granos de arroz o trigo se hierven con suficiente agua y tiempo para que se reblandezcan sin que la albúmina estalle y rompa la testa protectora. El grano debe estar entero y finalmente seco, para lo cual debe hornearse ligeramente. A continuación se mide la acidez, que debe oscilar entre 6 y 6,5 de pH; si es ácido, se añade carbonato de calcio (en el caso del trigo es de 3,5 g/kg) y algo de yeso (de 5 a 8 g), para evitar que se apelmace si está muy pegajoso.

Algunas fórmulas incluyen salvado de trigo y perlita con carbonato y agua. Algunos tipos de hongos como Lentinula o Flammulina crecen naturalmente sobre la madera; por ello, se preparan sobre serrín esterilizado y humedecido, además del grano de cereal cocido.

Algunas casas comerciales administran los micelios ya preparados para ser utilizados en la cría posterior de los carpóforos o setas que serán finalmente destinadas al consumo.

Cultivo de las setas

Para este fin se pueden utilizar todo tipo de lugares: un cobertizo, un sótano, cuevas, túneles o cualquier otro lugar que garantice las condiciones mínimas de la crianza de hongos, los cuales requieren una temperatura constante y un alto grado de humedad, pero sobre todo higiene, para evitar la proliferación de otros hongos o para que el cultivo no sea atacado por insectos o bacterias. Las condiciones naturales se dan en primavera u otoño. Si la producción se quiere extender al resto del año, es necesario el uso de instalaciones especialmente preparadas, con temperatura y humedad controladas.

La mayoría de las producciones industriales se realizan en naves especiales en donde la humedad y temperatura del aire están controladas; además, el aire se pasa por filtros muy finos que no permiten la entrada de elementos contaminantes hasta donde es posible. Las instalaciones cuentan con cámaras de pasteurización, en las que se esteriliza el sustrato que será utilizado en cámaras especiales de cultivo que cuentan además con instalaciones de iluminación adecuadas.

El cultivo del pleuroto o seta común (Pleurotus ostreatus) se realiza bien sobre trozas de troncos de árboles de tipo frondosas, como el chopo, la encina, el roble o el haya. Sin embargo, es posible producir casi cualquier hongo sobre pajas de cereales. Los champiñones y la mayoría de los hongos se preparan en placas de paja o sobre paja troceada, junto con serrín y otros acondicionantes. Para ello, se somete a la paja a un proceso de desinfección mediante su colocación en hornos a una temperatura entre 55 y 70 ºC durante quince o veinticuatro horas.

Este sistema de pasteurización es delicado y tiene en cuenta varios parámetros, tanto de humedad como de temperatura y tiempo de calentamiento o tiempo de enfriamiento. Éste es uno de los puntos que las grandes industrias se reservan como información confidencial, ya que de ello depende el éxito y productividad de la producción.

Se pueden cultivar hongos sin pretensiones de tiempo y volumen de producción; para ello no hacen falta tantas precauciones. La paja troceada y humedecida se puede utilizar como sustrato en esta fase de crecimiento del cuerpo frutífero; las precauciones higiénicas y de limpieza en el proceso nunca serán excesivas.

Las fórmulas más comunes de sustratos para esta última fase de cultivo de setas incluyen el corrector de acidez, cuya efectividad debe ser medida con los siguientes elementos: paja de trigo (50%), serrín grueso de chopo (46%) y yeso (4%). Otra opción es serrín de chopo o alguna otra frondosa (75%), harina de maíz integral (15%), carbonato cálcico (5%) y melaza o azúcar (5%). Otra opción es la que incluye deshechos de algodón (85%), salvado de arroz (5%), carbonato cálcico (5%) y azúcar (5%).

Aunque el sustrato utilizado depende de las preferencias del hongo que se vaya a cultivar, también se pueden usar, haciendo ensayos previos, elementos de desecho como posos de café, orujo de aceituna, bagazo de caña, mazorcas de maíz o cualquier sustancia de fácil acceso en la zona de cultivo.

El micelio y el sustrato se mezclan cuidadosamente cuando éste se encuentra en un estado cuya humedad alcanza el 70% aproximadamente. Este nivel se puede estimar apretando la paja o el sustrato en la palma de la mano: si chorrea agua es excesiva, y si no cae nada falta agua. El nivel ideal se percibe cuando caen sólo algunas gotas. La cantidad estimada de micelio está entre 2 ó 3% del total de la mezcla, esto es, por cada kilogramo de sustrato se pesan 20 ó 30 g de micelio ya preparado.

La incubación y el crecimiento del micelio hasta que cubre más o menos todo el sustrato depende de la temperatura, la luz y la ventilación; normalmente esta etapa culmina entre los 15 y 25 días de sembrado el micelio en cualquiera de los procedimientos, ya sea sobre tocón o troncos de madera, como sobre sustrato previamente preparado.

Actualmente se utilizan bolsas de plástico llenas del sustrato definitivo a las que se realizan una serie de perforaciones; estas bolsas se tratan a temperaturas de crecimiento, esto es, entre 20 y 28 ºC. Al final del proceso, después de dos o tres semanas, cuando el micelio ha cubierto totalmente la superficie del sustrato, el bloque se coloca en lugares frescos bien ventilados y con luz indirecta. La temperatura puede ser la del ambiente, siempre y cuando no supere los 28 ºC ni sea menor de 10 ºC. La humedad debe oscilar entre 70 y 75. Estos parámetros dependen de la especie de hongo de que se trate; en el cultivo de las setas comunes se da una temperatura entre 11 y 14 ºC en esta última fase.

En esta etapa final, el carpóforo o seta propiamente dicha ya brota a partir de una especie de huevo. Esta fase es bastante rápida y requiere el tratamiento de temperatura, luz y ventilación antes indicado, los cuales deben componer un cuadro similar al que se encuentra en la naturaleza. Para conservar la humedad se puede regar con fumigaciones finas para que no se formen gotas gruesas de agua en la superficie del sombrero, que puede, pudrirlo o afectar su desarrollo.

Plagas y enfermedades

Durante las primeras fases de desarrollo de los hongos es fácil que se contaminen con esporas de otros tipos de hongos que, aunque no ataquen directamente las hifas, micelios o setas, sí pueden resultar un competidor fuerte que arruine los cultivos. Pueden aparecer en cualquier momento, y la coloración de las colonias es generalmente llamativa y diferente, por lo que se facilita mucho su localización y presencia.

Una invasión muy frecuente en los primeros estadios del desarrollo es la de ciertas especies de hongos verdes del género Trichoderma, los cuales no sólo compiten sino que acidifican el sustrato, con lo que dificultan el desarrollo de los micelios que se ven así obligados a sobrevivir en condiciones adversas. Contrarrestar la acidez es una solución: para ello, simplemente se espolvorea bicarbonato cálcico en la zona de la invasión; lo más efectivo es separar las partes sanas de las invadidas e intentar el cultivo en un sustrato esterilizado colocando hifas o micelios en él. Es importante tener en cuenta que la temperatura de crecimiento de estos hongos se encuentra entre los 22 y los 27 ºC

Otra manera de combatir las invasiones de hongos es atacar directamente las colonias usando fungicidas muy efectivos, como la formalina al 2 por mil o productos fitosanitarios con esta propiedad. Otros tipos de hongos invasores de cultivos de setas se encuentran comprendidos en los siguientes géneros y especies: Chaetomium olivaceum, Rhizopus, Fusarium o Aspergillus.

Valor alimenticio de las setas

Los hongos cultivados poseen no solamente un sabor generalmente inferior al de las setas que provienen de la naturaleza, que se desarrollan esporádicamente en las condiciones ideales de crecimiento, sino que su valor alimenticio es distinto. Los hongos cultivados y frescos contienen una gran cantidad de agua que alcanza el 90 o 95 % del peso total. El resto de nutrientes puede establecerse de esta manera: entre 1 y 2% de proteínas, de 3 a 6% de hidratos de carbono, de 0,05 a 0,3% de grasas y de 0,5 a 1% de minerales.

100 g de setas frescas proporcionan entre 15 y 20 calorías. Las setas refrigeradas y, más aún, las desecadas alcanzan una composición distinta en la que las proteínas y carbohidratos se encuentran en una proporción mayor. Algunas de las tablas informativas de valores alimenticios de los hongos se hacen de esta manera; así, por ejemplo, el shiitake aparece con un contenido proteico de 15 a 35%, valor alto que se ha determinado a partir de las setas desecadas.

Algunas setas son famosas como curativas; tal es el caso del shiitake que se ha utilizado tradicionalmente para el tratamiento de enfermedades relacionadas con el colesterol, por ejemplo.
